Better Than Feta

Feta is undeniably delicious without doing anything to it at all, however, there’s something about marinating it in olive oil with herbs and spices that lends it an improved texture not to mention infusing it with great flavour. This recipe makes for a spicy condiment, if that’s not your thing simply omit the dried chili flakes. It seems silly to give amounts for this recipe, ultimately the most important thing is to ensure that everything is fully submerged under a layer of oil. Generally you would want to let this sit in the fridge for a minimum of 2 days before using, otherwise the marinade will not have had a chance to infuse the cheese. Marinated feta should last for about a month stored in the fridge, but don’t throw out that oil! Simply strain out the marinade ingredients and use to make a kick a$& salad dressing.


 Spicy Marinated Feta


  • 1 small tub feta, small cubes
  • 3 sprigs rosemary, broken into smaller pieces
  • 3 cloves garlic, crushed
  • Peel from 1 lemon, sliced into thin strips (use a vegetable peeler to remove larger strips, then with a sharp knife julienne into fine slivers)
  • 2 tsp dried oregano
  • 2 tsp dried red chili flakes
  • 1 Tb peppercorns
  • Extra virgin olive oil to cover (about 2 cups)


  • Layer cubed feta with herbs and spices in a glass jar
  • Cover with olive oil making sure that all ingredients are fully submerged
  • Store in the fridge for a minimum of 2 days before using
  • Feta keeps well for up to one month
